Yummy Campfire Breakfast Hash

The one great thing about this breakfast hash is that you can add anything that you like.


You can clean out your cooler the last day and come up with a great hash.


Part of my family likes it with the eggs and cheese and the rest don’t. I just take out what some like without the eggs and put it in another dish and then I add the eggs and cheese to the rest of the hash. It works just great that way.


This dish is also great without the eggs for lunch or dinner.




Hash Ingredients

  • 3 or 4 potatoes diced (depending on how many people)
  • 1 LB sausage. We like the spicy or you can use sausage links
  • I medium onion, chopped
  • 1 cup diced red or green pepper
  • 8 eggs beaten
  • shredded cheese (optional)


Instructions For Making The Hash

Cook the diced potatoes for about 10-15 minutes. I have also just boiled the potatoes ahead of time and them diced them. It doesn’t take as long to cook them then.

Add the sausage and onion and pepper and cook until the potatoes are cooked through.

Pour in the beaten eggs and cook until done. Now top with the cheese and let melt.

You can make the hash without the eggs and cheese and it is still good.
