Clam Recipes From The Oregon Coast
There are many clam recipes that you can find and here are some of the best. We have been eating clams for many years and love them. They can be fixed many different ways but we like these recipes best.
Please be sure to clean your clams really good because you don't want to eat sand and that is what will happen if you don't do it right.
Try some of these clam recipes because I know you won't be disappointed. They are very good!
Clam Chowder
- Enough bacon to make ½ cup crumbled bacon.
- 1 large onion, diced
- 4 cups peeled and diced potatoes
- 1 lb. Chopped or ground clams (save the juice) fresh or canned
- 3 cups half and half or milk
- 1 ½ cup water
- 3 tbs butter
- Salt and pepper to taste
- Brown the bacon and crumble for ½ cup.
- Drain pan and add the onion and cook until clear. Add the potatoes and clam juice or water. If you use fresh clams then you will need to add water to keep them from burning.
- When potatoes are done add the ground or chopped pre-cooked clams . Cook for 3 or 4 minutes and then add the milk. Do not bring to a boil after adding the milk.
- If you use milk instead of half and half you may want to thicken the mixture. Just add some instant potatoes for the thickness you want. Salt and pepper to taste.
We have found that the chowder is better the second day. The flavors seem to all flow together and it gets better.
Clam Cakes
- 2 cups raw clams
- 2 cups flour
- 1 tsp baking powder
- 2 beaten eggs
- 1/2 cup milk
- 1/4 cup clam juice
- 1 cup sweet onion, diced
- oil for frying or deep frying
- Mince the clams well. If you are using canned clams, drain and reserve the liquid.
- Sift the flour and baking powder together. Beat together the eggs, milk and clam juice and then stir into the flour. Add the minced clams and onion. You may need to add more milk because you want a batter slightly thicker than what you would want for pancakes.
- Add oil to skillet and drop heaping tablespoons of batter into the oil. Flatten the cake out and fry for 3-4 minutes or until crisp and brown. Flip and cook the other side.
- If you want to deep fry heat the oil to 360 and drop heaping tablespoons full into the oil. Cook until they are golden brown and then drain on paper towels.
Roasted Clams with Garlic Butter
- 6 lbs clams in shell
- 3/4 lb. butter
- 1-3 oz. Bottle garlic juice
Directions
- Melt the butter and add garlic juice. Stir and keep warm over a low heat.
- Wash clams thoroughly in running water. Arange clams on baking sheet and bake at 450 oven for around 15 minutes till they open.
- Serve the clams warm with the garlic butter.
Clam Dip
- 1 cup minced clams (reserve the juice)
- 1 8-ounce package cream cheese
- 1/2 cup sour cream
- 1 tbs lemon juice
- 1 to 2 tsp Worcestershire sauce
- 1/4 cup chopped green onion
- 1 tsp dried parsley flakes
- Salt and pepper to taste
- 1/2 tsp garlic salt
- Soften the cream cheese with the sour cream, lemon juice and Worcestershire sauce.
- Stir in remaining ingredients
- Cut out the center of a round loaf of bread and pour the clam dip into the hollowed out bread. Tear the bread that you removed from the loaf in to small pieces and then serve the best clam dip.
