Delicious Crab Bisque

There is nothing better to start a meal than a Dungeness crab bisque. You can either make it a meal in itself or, as the beginning of the meal.
The crab is so succulent you won’t be sorry you tried this recipe. You can usually get crabmeat at your favorite supermarket. It is more readily available in the winter and spring months.
Recipe Ingredients
- 2 tbs butter
- 1 tbs minced shallots
- 2 tbs flour
- 2 cups chicken broth, I use chicken bouillon
- 1/4 cup tomato paste
- 2 cups heavy whipping cream
- 1 lb crab neat
- 2 tbs sour cream
- 1 tbs chopped fresh parsley
Directions For Making Crab Bisque
- In a large pot sauté shallots in butter for 2-3 minutes or until soft using medium heat.
- Remove from heat and stir in flour until blended. Return to heat and cook until mixture is bubbly.
- Gradually add the broth and then tomato paste. Whisk until smooth.
- Add whipping cream and crab, bring to a boil and then reduce heat to a simmer. Cook 3-4 minutes and then serve with sour cream and a dash of parsley.
